My mother's Butter Tarts
Recipe for my mother’s Butter Tarts which we had as part of dessert for Christmas
12 prepared tart shells from shortcrust pastry
1/3 (75 gm) cup butter 1 cup brown sugar (200 gm) 1 large egg 1 teaspoon vanilla ½ cup raisins (100 gm) ½ cup chopped walnuts or pecans (100 gm) Mix butter, brown sugar until creamy. Beat in the egg and vanilla and then add nuts and raisins. Pour mixture equally into tart shells. Bake in a 350F, 190C oven about 20 minutes. Bake on the bottom shelf so the inside pastry cooks.
